He typically doesnt use temp control fermentation on his wines, and rather opts for cement tanks which are naturally insulating due to the thick stone walls. The wines are unfined and unfiltered with minimal sulfur at bottling. Another fine example of natural wine. The vineyards are mostly in the more inland colline (hills) of the Ciro appellation, with limestone clay soils.
